Cinco De Mayo Breakfast (or Dinner!)

MAY FIFTH! According to its wiki, “Cinco de Mayo (Spanish for “fifth of May”) is a regional holiday in Mexico, primarily celebrated in the state of Puebla, with some limited recognition in other parts of Mexico.” ALSO CELEBRATED ON EVERY COLLEGE CAMPUS. lols.
To celebrate, my friend KJ gifted me some homemade chorizo last week (thanks man!) and I wanted to fry it up without losing the integrity of the meat (mMMMmmmM chorizo butter!)… so I made breakfast for dinner!
I threw the chorizo in a pan over medium high heat until it was cooked through and sliiiightly crispy. I drained some of the excess oil, added in a bit of fresh canola and added potatoes (pre-boiled, diced), 1 can of black beans (drained and rinsed), a bit of sliced shallot and minced garlic. After I gently combined all the ingredients (a big slotted spoon would be the best choice for this), I threw the pan in a 450 degree oven for 20 minutes or until the potatoes are beautifully golden brown – there’s nothing else to “cook” here, you’re just getting that tasty crunchy texture in the oven!
Pull it out of the oven (use an oven mitt!), garnish with sliced green onions, throw on some fried eggs, sliced avocado and flour tortillas and you have yourself a feast! Optional: cojita cheese, fresh tomatoes and/or cilantro if you’re naaasty. Hee hee.
OH WAIT. Don’t forget your tabasco (I just picked up the garlic bottle last week!) and ketchup… it just won’t taste the same without it. If you’ve never tried it, you’ve never lived. Make it a break-unch-inner meal!
