Oven-“Fried” Cod and Okra with Avocado and Tomato
Seriously. Perfect for a whenever meal.
Put 3/4 cup of cornmeal, 1/4 cup flour, 3 tablespoons cajun seasoning in a container. Crack 2 eggs, scrambled and a small bit of water into another container.
Preheat oven to 500 degrees. Defrost cod (or any whitefish). Coat in egg mixture, then coat in cornmeal mixture. Repeat for okra. Put everything on a greased baking sheet and cook in preheated oven for 12 – 15 minutes. Serve with guacamole. SUUUPPPPEERRR EASY.
Throw the cod in bread and serve with cole slaw on top for a quick Po’ Boy sammich! EEEEEEE.
