An Argentinean Love Affair, Medium Rare

Steak. The object of so many carnal desires. Canine teeth, designed to rip and tear, break down tender meat fibers, many times surrounded by a sauce that adds depth and freshness. It is quite possibly my staff of life. LOL OK MAYBE I WON’T GO THAT FAR BUT THEY’RE REALLY GOOD. Here’s my prep:
Marinade flank steak (as always from Don and Joe’s Meats, more specifically, Don – hee hee) with Kosher salt, freshly cracked pepper and minced garlic for at least 1 hour to overnight. Make sure pull your steak out of the fridge and onto the counter so it doesn’t “seize up” during the cooking process (cold meat, when cooked tends to do that). Turn on your broiler on high and throw the steak underneath and cook until nice n’ golden on the outside and nice n’ medium on the inside – about 130 degrees… go ahead and use a meat thermometer if you’re unsure. If you’re trying this for the first time and it’s too raw for you, just slice it all up and throw it in a skillet for a few minutes… at the very least, you’ll know what you’re shooting for in terms of taste and texture.
And since I can’t get enough of that chimichurri sauce from that one bar near my friend Jorge’s house (omg EMPANADAS SO GEWD)… I used a recipe from Epicurious here:
1 cup (packed) fresh Italian parsley
1/2 cup olive oil
1/3 cup red wine vinegar
1/4 cup (packed) fresh cilantro
2 garlic cloves, peeled
3/4 teaspoon dried crushed red pepper
1/2 teaspoon ground cumin
1/2 teaspoon saltThrow in a blender / food processor and serve!
I don’t want to sound like a snob or anything (so get ready, cause I’m about to sound like a total snob lol), but if you cook regularly, you should all these ingredients lurking in your pantry. If you like like the occasional taco or quesadilla you should have cilantro in the fridge and a bottle of cumin that’s UNDER 1 year old. If you eat salads, you should have good olive oil and red wine vinegar to dress your lettuce. If you eat pasta, you should have a ton of garlic, crushed red pepper and parsley on hand to give a lil’ more oomph to your tomato sauces – homemade or otherwise. Just sayin’. A PACKED PANTRY WILL SAVE YOUR (HUNGRY) SOUL.
Lesson: If you’re going to eat beef, it might as well be a steak. Save a few trips to the fast food joints and eat chicken – actually, just eat 2 of those apple pie thingies. Yes. Save the beef consumption for real meat. MEAT MEAT MEAT.
