Kalbi in the Kitchen

Korean Kalbi. Same recipe as before, but with a bit more heat. Match that with cold kim chee, freshly cooked sticky rice and a cold bottle of Hite beer, and you’re set (and susceptible to passing out) for the rest of the night.
Short ribs have been on sale a lot these past few weeks, probably due to the fact that summer is the season for grillin’. Stop by your friendly butcher (I use Don and Joe’s in Seattle – incidentally, I prefer Joe) and ask ‘em for a couple pounds. Also, ask them what’s on special and if you’re not familiar, don’t hesitate to ask. They’re trying to sell you more meat, so they’ll tell you the best way to cook ‘em. I have a pound of sweetbreads sitting in my freezer waiting for me to poach / saute ‘em off. MMMMmMmMMmMm.
