Thomas Keller’s Rotisserie Chicken. Buy organic, dry the bird, add a good amount of Kosher salt n’ pepper in the cavity and sprinkle a fine layer of salt on the top. Roast in the oven @ 450 degrees for 55 minutes. Then, let rest for 15 minutes.
