Tomorrow’s Congee Prep:
This is mainly for my use, but I thought I’d share in case you had turkey leftovers. Hee hee.
Morning:
1. Strip meat and breakdown turkey carcass.
2. Throw 1 onion, 4 slices ginger, 6 dried shiitake mushrooms and bones into pot – cover with water.
3. Bring to boil and remove shiitake mushrooms. Set aside.
4. Skim off scum and let simmer 1.5 hours.
5. Strain, cool and store in fridge.Evening:
6. Throw sushi rice (2 cups) in with 5 cups stock (or a combination of broth and water).
7. Bring to boil and turn back to simmer 2 hours.
8. Serve.
