Pesto from a Blender’s Perspective!

Pesto, pesto, pesto. When I’m bored hungry I make pesto! This one is made from 1 fist full of flat-leaf parsley, 4 canned artichoke hearts, 3 garlic cloves, a thumb-sized chunk of Parmesan cheese and a palm’s worth of toasted almonds… all thrown in a blender on high with 3/4 cup of olive oil drizzled in. That, mixed with some whole wheat pasta and cherry tomatoes makes for a nice, healthy luncheon! Right LauLau? RIGHT? LOL.

SC120: It doesn’t normally have almonds (normally it has pine nuts) or just parsley (it should also have oregano or basil)… but I had to improvise. I’ll call it artichoke pesto! YAY!
