Crispy Chicken Tenders Served with a Red Pepper Sauce

Crispy Chicken Breast Stuffed with Chorizo, Mushrooms and Kale over Red Pepper Sauce
Two dishes, same base ingredients. The appetizer (larger view here) is pretty straight forward, while the main dish (larger view here) may need an explanation. I pounded out some chicken breasts under plastic wrap until thin and added stuffing (in this case the chorizo mixture) at the base of the flattened meat. Then, I rolled it up onto itself, tied with string (optional) and rolled it in flour. Once coated, I dipped the chicken in some egg and then coated it with panko (Japanese breadcrumbs). After all that, I sauteed in oil until all sides were golden brown and then put on a baking dish in the oven @ 350 for about 20 minutes (or until my digital thermometer read 165 degrees internally).
I cooked the stuffing beforehand to make sure that it was just the chicken that needed to reach safe bacteria-free temperatures (sorry, that doesn’t sound so appetizing). Oh, and as for the red pepper sauce… it was just a bottle of already roasted red peppers (liquid discarded) with a good amount of salt and freshly cracked pepper thrown in a blender on high with about 1/4 cup of peanut oil drizzled in. REALLY EASY, REALLY FANCY FANCY. Hee hee. The blender emulsifies the oil and gives the sauce more body and a smoother texture and flavor, rather than just an overwhelming liquid of just pepper. Pour into a squeeze bottle and decorate as much as you want!

You know what I hate about your food posts? You make it sound so easy to make really great tasting and great looking dishes, but I bet someone like me would screw it up every day for a week before I get it to taste or look half as good as yours.
Move back home and cook for me while Chris is working late nights.

Mark: You can try to make the red pepper sauce at least! Serve it with french fries or some grilled steakers. You’ll like it, me promisseesesseses.

@Spec: Um, no. I screwed up Simply Homemade chicken fingers. You’re supposed to just toss them into a bag of breadcrumbs (might have been panko) and then put them on a hot pan sprayed with Pam for a few minutes. I somehow burned them! If it doesn’t come out of a box, or it requires something more than add water and microwave, I’ll probably have trouble with it. It’s not like building a computer; now that’s easy
