Big Shrimp Fajitas!

I picked up some fresh tiger shrimp from Bristol Farms yesterday, in hopes that I would make a white bean seafood pasta dish by Ruggero Gadaldi (we even kissed the same girl!). I didn’t think of it before, but I think it’s weird that LauLau and I had brunch @ his latest restaurant: The Last Supper Club earlier that morning too (ZOMG Italian sausage hash with smoked mozzarella SO GOOD). That man haunts me! LOL.
So when I got home, I figured that I had more Latin ingredients than Italian (even though there’s a lot of overlap)… so I made shrimp fajitas! Quick breakdown follows:
Spicy Shrimp Fajitas

Filling:
1 Yellow and green pepper, cut into strips
1 Onion, julienned – cut in 1/4 inch slices
3 Cloves garlic – minced
1 link of chorizo (cut out of its casing)
1/2 lb. Tiger shrimp (good for 2 people)
1 Tsp. Cumin
1/2 Tsp. Cayenne powder
1 brick of monterey jack cheese – shredded
Olive Oil
Salt
Freshly ground pepper
Fabrication:
1. Preheat broiler and large nonstick pan over med-high heat
2. Add chorizo and render fat (or add 2 rounds of olive oil around the pan)
3. Add julienned onions and peppers and let cook for 3 minutes, stirring occasionally
4. In separate bowl, add shrimp, cumin, cayenne, pinch of salt and pepper and a swig of olive oil and let sit while veggies cook
5. Once broiler and veggies are ready, add shrimp on top of the vegetables and place under broiler for 6 minutes
6. Wrap tortillas in aluminum foil and place in a lower rack of the oven to warm
7. Pull pan and tortillas out of the oven, top with shredded cheese and serve straight from the pan (instructing guests that the pan is very hot)
It wouldn’t be such a good idea to place a super hot pan to your kids, so serve accordingly. I wouldn’t want any lawsuits coming my way. Hee hee. The chorizo (Spanish sausage) adds a LOT of salt and spiciness to the dish, so you might want to adjust your seasonings depending if you use it or not. This recipe is a good foundation for any kind of meat fajitas… so experiment… it’ll be tasty I promise! It’s Memorial Day anyway, so grill to your heart’s content!
