She Wanted Something Less… Alive. LOL.

Turkey and soy meatloaf with roasted rosemary and garlic potatoes
Larger view here. Sleepy. Very food-coma-ish sleepy. The above photograph is meatloaf on a plate. But, interestingly enough, this meatloaf might not have been a meatloaf @ all. For you see, dear reader, I am trying to compromise my MEAT MEAT MEAT diet with a certain someone’s (let’s call her L-Boogie)… how can I put this delicately without her getting mad – alternative eating lifestyle.
So, how do I normally make meatloaf? Check out the first link on one of my ollllddddeessstttt posts. You can click, but you have been forewarned: *Virtual Artery Clog Ahead* As I explained my recipes, I could see her entire body wrench at the exact moment when I said “eggs,” “wrapped in bacon,” and “sometimes I don’t even drain the fat!” It did not go well. At all. Haha.
So, we talked it over and decided on a combination of ground soy meat and ground turkey. Yeah, weird I know. Once we got back to my place to cook, I added about 1/3 cup of BBQ sauce, 1 1/2 cups panko, more than a few chugs of Tabasco, 1 whole egg, a tbsp of dijon mustard, 1/2 chopped onion, 2 stalks of chopped celery, 5 minced garlic cloves and 3 chopped carrots.
I just mixed everything in a bowl with my hands until completely combined and then I separated them into two loaves to bake in a 350 degree oven for about 45 mins (or until the internal temp of the loaf reached 150 degrees). I then brushed the tops of the loaves with some bbq sauce while turning the oven’s dial to broil for a nice crispy coating. I let sit for about 15 mins and then eat eat eat! YAY.
I served it with some burnt nice n’ charred roasted potatoes with rosemary and garlic and some black tea mixed with cranberry juice (my favorite!). The potatoes are all gone now (someone has a lunch for tomorrow! YAY.), so that’s why they’re not in the pictura. Overall, the meal was really tasty (AND HEALTHY!). As long as the meat doesn’t compromise the texture, you should be all good to experiment with meats and fillings… If things go terribly wrong, you can always slather it with BBQ sauce! I’ve done it before! Haha.
