Last Minute Chicken

What do you do when someone thaws some chicken and expects you to cook it? Bake it! After laying a bed of celery, onion and carrots on some foil, I added cumin, salt, coriander, cloves, pepper, Cayenne and olive oil to the chicken and rubbed it in really well. I then placed it on top of the bed of veggies, topped the chicken with a few pats of butter and baked it in a pre-heated 375 degree oven until its internal temp. reached 175 degrees or until the juices ran clear.
After I removed the baking dish from the oven, I plated the chicken to rest while I skimmed the fat off the remnants from the pan. Then, I put dish over 2 burners and added a little bit of water to loosen the brown bits at scraped the bottom of the pan. When it reduced a lil’ bit, I added a couple pats of butter with a slurry of flour and water and cooked for a couple more minutes to thicken. Serve and eat! Simple as that.

definitely beats my WTF Chicken. recepie: chicken + whatever else you can find in the kitchen. now did jason or you name the dish?

yeah, that was my naming.. just shorter to type out than “whatever’s leftover in the fridge chiicken”, while me and h were IMing, and i guess it stuck
