Veggie… For Now.
I began my first day of being a temporary vegetarian two days ago. Yup. No (red or white) meat. Why the sudden change? The time for celebration has ended and I realize that the next gastronomic binge that I will experience will probably be Mark’s birthday early next month. I might as well treat my body right until then and *gasp* start exercising on a more regular basis. TIME TO BREAK OUT THE DDR MATS AGAIN! LOL.
Here’s what I have eaten so far:
Bfast:
Vanilla Almond Special K, vanilla soy milk (Silk) and a generous sprinkling of cinnamon
Kashi granola with vanilla yogurt and assorted fresh fruitsLunch:
Veggie Pancit (Filipino noodles)
Roasted leeks and cous-cousDinner:
A southwestern pita from Pockets
I’ll hit up the local Indian Buffet (Mutter Paneer) or Thai restaurant (Pad See Ewe with tofu, extra spicy) if I’m dying for some take-out, but I think I’ll be ok for a while.
What’s on the menu for the rest of the week? Pesto n’ pasta, homemade soups n’ grilled cheese, grilled portabello mushrooms, black bean salad (awesome with corn tortillas), huevos rancheros and some of Jacqui’s broccoli love.
This probably won’t last long since I’m already craving a hamburger run as I write this.. but we’ll see how it goes. I’ll post recipes and pictures as they come in. It won’t be long ’cause…
I’m already starving.

Not quite gourmet, but still a good veggie option: Jimmy Johns Veggie Subs. I’m on a meatless kick right now too and this hits the spot! Mmm mutter paneer is good too…you have to get a mango lassi with that

not that i tried..but man meat is awesome. goo angus burgers!
