Chimichurri Is Happiness

I had something like this this morning at 1AM, sans rice. Kabobs, Mojitos and 4 empanadas with a crust so light and crispy and fillings so deliciously flavorful and hearty, I almost cried when I took the last bite.
That’s a lie.
I did cry.
