Grilled Cheese: The Oooey Gooeyness Locked Within
It’s Slashfood’s grilled cheese day today! All day long they’ll have posts specific to one of the most simple and satisfying quick lunches ever. So far, they offer recipes on Grilled Cheese and Asparagus, Cream Cheese Stuffed French Toast, Breakfast Cinnamon-Raisin Apple Grilled Goat Cheese and the Carribean Grill. They all look delicious (even the raisin one!) and really show how flexible this ‘always in the pantry’ staple can be.
It’s a great way to spotlight a food, especially in a the new mutli-author ’serious food blog’ arena. I love my grilled cheese with a couple of slices of hearty wheat and classic sharp cheddar cheese. Whenever I can, I add slices of plum tomato and use a little bit of some homemade roasted garlic / parsley butter (or some ready-made flavored oils) to get a definite flavor and color on the toasted bread.
Served with a simple rocket (arugula) salad or tomato soup and a cranberry iced tea, this lunch comes a long way from the Wonder + American grilled cheeses that we all had growing up. Not that there’s anything wrong with eating that now, but it’s nice to upgrade old favorites to suit a more somistificated palette (read: impress the in-laws LOL).

But you know, sometimes there just isn’t anything better than the simplicity of some cheese melted to the perfect consistency between two slices of white bread. Toss in some Campbell’s tomato soup and you have one of the best comfort foods around without a whole lot of fuss or fancy.
