A Quick Bite Of Heaven
By Alice’s suggestion… we made Booby (Yeah Booby) Flay’s Greek Orzo and Grilled Shrimp Salad with Mustard-Dill Vinaigrette. Flickr album here! It was a very complex tasting dish, without all the prep time of high end gourmet meals. Orzo is simply rice shaped pasta that cooks just like the spaghetti in your cupboard. If you’re not familiar with it, don’t fret… just keep tasting after 7 or 8 mins until it’s cooked thoroughly and tender. After it’s cooked, mix the still warm pasta with the feta cheese and freshly chopped veggies. Then get your whisk arm workin’ to emulsify (the act of combining water + fat using an egg yolk) the vinaigrette and add to your liking. That’s it!
The dill really completes the dish and makes it taste unbelievably fresh. We added some red onion for bite too. This would work WITHOUT grilled shrimp… but I wouldn’t recommend it with chicken or any other meat or seafood. It’s much too delicate for anything else. It’s perfect for that no-nonsense afternoon snack or even as a light supper with a glass of pinot.
