End Of May: Summer Fun!

Summer finally started here in Chicago. FINALLY TIME TO BBQ! On a lighter note, I made some crepes yesterday using Alton Brown’s recipe. I made two batches:
- 1. Sun-dried tomato crepes filled with spinach, diced ham, finely grated parmesean cheese topped with a creamy lemon hollandaise sauce.
- 2. Vanilla kissed crepes with choices of cinnamon glazed bananas, nutella and strawberry or red raspberry jam.
The savory batch was my take on Eggs Benedict, my all-time favorite breakfast dish. I made the cinnamon topping a LONG time ago in high school for an African plantain dessert for French class. It was so weird that I remembered it so vividly. Too bad I forgot to make a serving creme fraiche to go with it. Next time lang. The crepes were light and fluffy and the filling wasn’t very heavy either. Good meal!

Those crepes were freakin’ good! The cinnamon glazed bananas were nice, especially on corn on the cob! LOL
