Open-faced Albacore Tuna Salad

It was a Friday afternoon and I was incredibly hungry, but I didn’t want leftovers because I was traveling over the weekend. Soo, I found a can of tuna and built the meal from there. Note: Albacore is sashimi-quality tuna that is found in most food shops and is bled-blast frozen and raw-packed (cooked only once in the can) Oooooooishi (Delicious)! Recipe Follows~

Add whatever you want to this, this is what I had on hand. You can also substitute the Tuna with a couple hard boiled eggs coarsely chopped.

Ingredients:

For Tuna Salad:
1 Can Albacore Tuna
About 3 Tsp. Mayo (your call)
Fresh lemon juice
1/2 of a red onion, diced
Freshly cracked pepper
A Pinch kosher salt
1/2 cup of peas (frozen or canned)
E.V.O.O. (Extra Virgin Olive Oil) enough for one pass around the bowl

A Handful of pre-washed greens (I used spinach)
2 Pieces of thick hearty wheat bread

Execution:

Toast the bread.

In a large bowl, GENTLY mix all ingredients together (except greens and wheat bread). You really want to keep the integrity of the Tuna. Make sure you taste it. Its a good habit to take up.

Cut the bread into halves, thirds, diagonals or whatever. It’ll be easier to eat that way. Throw it on the plate, lay the greens over the bread and put as much tuna salad as you want on top (I went a little crazy).

I’m pretty sure it’ll feed 2 – 4 people if paired with some bowls of tomato soup (with parmesan reggiano grated on top). Enjoy!
